FUME SEASONED SWEETWORT FOR WHISKEY PRODUCTION

Fume seasoned sweetwort is a product made of malt from fine quality Moravian barley. The process of malting the barley on a malting floor is identical with malt production. The significant difference is kilning of this malt on hurdles. During the drying process peat of good quality is added in fire under the hurdles. As the peat burns, it imparts its characteristic aroma, carried by fumes, to the kilned malt. Sweetwort is then prepared from the malt and it is consequently processed in liqueur distilleries. Fermentation from the activity of yeast follows, then distillation and several years of maturing in oak casks.
